I am in Columbia weekly for egg meet ups. PigDuck Farm fresh duck eggs are produced from free range ducks fed an non-GMO, corn, and soy free feed along with kitchen scraps. We have 48 ducks who are a barnyard mix of White Layers, Khaki Campbells, Silver Appleyards, Cayugas, Swedish, and Runner ducks. More info on their feed can be found here: Like chicken eggs, duck eggs keep up to 5 weeks in the fridge washed and up 4 months unwashed in the fridge. We leave our duck eggs unwashed for their longevity. Ducks are water fowl, so the eggs can be dirty (especially after bad weather). If you’d like your eggs washed before shipping, just let us know! Duck eggs can vary in size, being large with double yolks and as small as a chicken egg. Many people who cannot eat chicken eggs can eat our duck eggs, especially those who have corn or soy allergies or deal with histamine intolerance or mast cell issues. PigDuck Farmer Emily became a duck farmer because duck eggs are one of her two safe foods. The shell of a duck egg is thicker than a chicken egg, so it takes a little more force to crack them. Duck eggs are larger than chicken eggs, with a larger yolk-to-white ratio that makes them ideal for baked goods. Golden in color and rich in flavor, baked goods made with duck eggs tend to be moist and fluffy, rise better, and hold their shape well. Duck eggs are an excellent source of nutrition. Their dark yellow yolk indicates that they hold more antioxidants, more omega-3 fatty acids, and 50% more vitamin A than chicken eggs. Duck eggs offer more protein than chicken eggs and half the daily requirement of selenium in one egg. Duck eggs contain all vitamins except vitamin C. They also contain all iron, copper, zinc, magnesium, and manganese.
